At The Azure Coast, every dish is a reflection of Chef Kenji Tanaka’s lifelong passion and disciplined artistry. Born in Kyoto, the cultural heart of Japan, Chef Kenji trained under masters of traditional Edomae sushi before journeying to the tropical islands. Here, he found a profound connection between the disciplined simplicity of Japanese cuisine and the vibrant bounty of the sea.

Kenji views the ocean not just as a source of ingredients, but as his greatest teacher. He insists on personally selecting the freshest daily catch, believing that the finest sushi requires an uncompromising respect for nature’s perfect balance.
